Lentil Soup


What we need:

  • 1 1/2 cups of lentils
  • 1 onion, chopped
  • 1 celery stalk, chopped
  • 1 medium-sized carrot, chopped
  • 1 medium-sized potato, chopped
  • 2 garlic cloves, crushed
  • salt and pepper
  • 4 cups of water
  • 1 tablespoon of butter or vegetable oil
  • 1 teaspoon of ground cumin
  • 1 lemon cut in half
  • croutons
How:
          
  • Heat butter (or vegetable oil) in pot, add onions. 
  • Stir until onions are soft.
  • Add lentils.
  • Stir for one minute, then add water and bring to a boil. 
  • Lower heat and add the celery, carrot, potato, garlic and cumin.
  • Simmer uncovered for 1 hour. 
  • Blend or process in batches until smoothed in a puree.
  • Serve hot.
  • Add salt, pepper, squeese lemon and croutons to your desire.
